Monday Cherry Pick Me Up Coffee Cake

1 1/4 C. Flour

1 1/8 tsp Baking Powder

3/8 tsp. Baking Soda

1/2 tsp. Salt

2.6 oz. Unsalted Butter (softened)

1 C. Cane Sugar

1 Egg

2 tsp. Vanilla Extract

1C. Sour cream

Filling:

1 Can Cherry Pie Filling

Topping:

1 Tbsp. Brown Sugar

1/4 C. Flour

3 Tbsp. Butter

 

Preheat oven to 350F.

Grease an 9″ spring form pan.

In a mixing bowl combine all ingredients and stir until just combined. Spread 2/3 of batter on the bottom of the spring form pan and halfway up the sides. Place cherry filling on top. Drop by 20 gram sized (or a small cookie dough scoop) of remaining batter on top. Sprinkle with topping.

Bake 40-60 minutes or until a toothpick inserted comes out clean.

Coffee cakes are best the same day.
